What Via cad software would be good for plasma cnc ? The plasma cnc I am getting comes with Fusion 360, and after trying it, I think I hate it. I think a 2D program would be better and easier

I guess you need a G-Code for your CNC-Machine. Create first a 2D Drawing in 1:1 and convert it to G-Code. Maybe you can use:

ViaCAD 2D would work fine. Export as a .dxf r12 into a CAM program, to
generate G-code. I use SheettCAM, very easy to use.
