When I'm exporting to STL, I can adjust the Normal deviation to change the amount of faces for round objects. By default the number is 7, but a large round solid will then be too crude, with only a few faces. So I lower the number to increase the amount of faces. But all the other parts where fine, so I only want to have this certain part to be exported with more faces. Can this be forced in ViaCad or do I have to export it separately and combine the STL's afterwards?

The triangulation is global, it'll be applied to every curved surface within the file. Strictly speaking, .stl format declares one object per file, and locates its bounding box in the positive x,y.z coordinate quadrant, so that multiple unrelated files can be nested in the RP machine for a production cycle.
