Bought a SharkCAD Pro license yesterday, so I am a noob.
I am watching the tutorial video, the video explained that in 2D mode, open a model, it will flatten the 3D model to 2D views, but it didn't happen on SharkCAD v12, was that changed intentionally or some setting to set the behavior? Or just a bug?

You need to be in 3D mode to use the model to sheet. If you do 2D mode, 3D models disappear from the screen- I think.
