i was wondering if anyone might know how to project a curved surface to a flat/plan view (projection) without doing a bunch of hoop jumping….

The just-expired beta of VCPro 10 PowerPack flattens ruled surfaces, which are developable. Without PowerPack, there are hoops.

The PDF looks like a flatten operation as murray noted.
If you need a Shadow Projection and have PowerPack try:
PowerPack : Draw : Shadow Projection
